Morecambe Bay potted shrimps, Forest of Bowland game pie and, stuffed mushrooms with Garstang blue cheese have all featured on a special 10-course taster menu to celebrate Lancashire Day.
The Lancaster House Hotel marked the day with ten local residents who each submitted their own variation of a local dish for head chef Damien Ng and his culinary team to work on and serve to them at a complimentary dinner.
The hotel, which is run by English Lakes Hotels Resorts & Venues, decided to serve its guests a Lancashire Day ‘Ultimate Tasting Menu’ by asking the local community to put forward their favourite dishes in a competition.
The lucky winners were Lancaster residents Simon Dellow, Kathryn Bond and Stacie Knowles, Clare Denham from Bolton-le-Sands, Toni Hayward from Heysham, Mark Houghton from Cabus, plus Jackie Hutchinson, Lynn Sharples, Pen Hutchinson and Patricia Bailey who all live in surrounding areas.
“Our tasting menu was designed to showcase local produce and delicacies Lancastrians are incredibly proud of,” explains Lancaster House Hotel head chef Damien Ng.
“We had a great response to the competition and enjoyed a lovely evening with the ten lucky winners who were able to share, discuss and reminisce about their favourite dishes. With all ten, there was invariably a family story behind the preparation of each meal.”
Other items on the menu included parched peas, a Bonfire night special, smoked Fleetwood haddock and potato soup, hot pot with black pudding and a courting cake which was traditionally presented by a woman to her fiancé as a token of her love.
Pen Hutchinson said: “Thanks to the team at Lancaster House for a wonderful evening meal. The staff made us really welcome and Damien was really friendly and of course an excellent chef.”
