North East Restaurant Raises the Steaks

CaptureThe North East’s newest restaurant is ‘raising the steaks’ for dining out in the region after unveiling its first menu.

The Karbon Grill – Kitchen and Bar, which opens inside the Hilton Garden Inn, Sunderland on Thursday April 28, will serve a wide range of Pan-American cuisine, with a hint of Latin flair.

Most of its dishes, including the signature Karbon Burger, seasoned with a unique rub, as well as the Cajun blackened stone bass, baked North Sea lobster and a 30oz Tomahawk rib-eye steak, designed for sharing, will be cooked on a charcoal fuelled Josper Grill for a stronger barbecue flavour.

Other signature offerings, designed to bring a taste of the Americas to the North East, include smoked haddock and seafood chowder, Tennessee glazed ribs with spiced corn, Maryland crab cakes with Cajun mayo and shin of beef, braised in craft beer from Sonnet 43 Brew House, County Durham.

Inspired by its head chef, Luca Tomassetti, originally from Rome, the Karbon Grill’s launch menu also incorporates a selection of Mediterranean options, including pizza, pasta and Tuscan white bean stew, with additional sharing platters available for those who struggle to settle on one specific dish.


The stylish and contemporary restaurant, which features classic artwork, leather upholstery and a copper mood lighting feature, will open daily for dinner, with an adapted menu served in the adjoining bar for lunch or a lighter evening meal.

Options here include light bites ranging from homemade crackling to Buffalo chicken wings, sandwiches such as the signature pit-fired hot dog with mustard mayo, main meals of pumpkin-filled ravioli or flat iron steak and desserts including New York cheesecake.

A similar selection will be available via room service exclusively for the Hilton Garden Inn, Sunderland’s overnight guests.

All diners will be able to enjoy their meal with a drink from the bar or Karbon Grill’s extensive cocktail menu, which offers more than 20 classic and original creations.

“The Karbon Grill kitchen and bar will be a unique addition to the North East’s restaurant scene,” said head chef, Luca Tomassetti.

“Not only will it serve as a destination for discerning diners who want to enjoy mouth-watering food and high standards of service but it will also ensure our hotel guests are well catered for.”
