A stylish new Pan-American destination restaurant set to launch in Sunderland has used the North East’s proud industrial heritage to inspire its name.
The Karbon Grill, Kitchen and Bar, at the soon to be opened Hilton Garden Inn, Sunderland hotel will offer food lovers one of the most unique gastronomic experiences in the region.
The restaurant’s contemporary design reflects its innovative and modern style, with its name paying homage, with a contemporary twist, to the mining heritage that is so much a part of the city of Sunderland and the site on which the hotel is built.
Designed to offer diners a holistic restaurant experience, the venue – which launches at the end of April – will offer something truly different in the world of food.
Welcoming hotel guests, those visiting the adjacent Stadium of Light and anyone wishing to experience dining with a difference, the menu features Pan-American cuisine, with elements of Mexican and Latin fusion dishes.
These unique dishes will be complemented by regional specialities and the venue’s top team of chefs will showcase some unique cooking methods and speciality dishes not available at any other restaurant.
Signature grill dishes such as steaks, ribs, burgers, seafood, tapas and sharing platters, featuring unique rubs and spices, will ensure that there is something to tantalise every palate, with the venue open daily for breakfast, lunch and dinner.
An extensive wine, spirits and cocktail list will also ensure the perfect accompaniment to any meal.
The stylish, contemporary restaurant interior affords the perfect atmosphere for both daytime and evening dining, with key design elements in the 100-seater eatery including stylish, yet comfortable seating in dark red, leather upholstery, feature mood lighting, classic American-themed black and white artwork and brass accents.
A separate children’s selection will be available for younger visitors and a tailored bar and room service menu will also be available for residents at the Hilton Garden Inn Hotel Sunderland.
Complementing the restaurant, the Karbon Grill will also boast a stunning, contemporary bar, serving an extensive range of wines and cocktails, as well as barista teas and coffees, cakes, snacks and light meals throughout the day and night.
Again the Pan-American theme features in the bar menu, with a range of tapas-style dishes, street food and light bites available for those wishing to enjoy a more informal dining experience.
Ideal for a mid-morning coffee, post-work drinks or a meeting place for pre-evening cocktails, the bar is set to be one of the most stylish go-to locations in the city.

The Hilton Garden Inn Sunderland, which is currently under construction next to the Stadium of Light, will open in time for Sunderland AFC’s final home games of the season.
Along with the Karbon Grill Kitchen and Bar the site will boast 141 en-suite bedrooms, a 24-hour business centre and a number of meeting rooms.
